How to Make Ricotta in 15 Minutes
Step 1: Heat the Milk
Pour milk into a saucepan and slowly heat it over medium heat until it begins to steam (around 85°C / 185°F). Do not let it boil.
Step 2: Add Acid
Remove the pan from heat and stir in the lemon juice or vinegar. You’ll notice the milk curdling almost immediately — white curds separate from the yellowish whey.
