You’ll Never Buy Ricotta Again! Homemade Ricotta with Just 2 Ingredients

Ricotta cheese is creamy, dreamy, and endlessly versatile. From lasagna to desserts, it adds richness to both savory and sweet dishes. But have you ever looked at the price tag and thought, “There has to be an easier way”?

Good news: there is! With just 2 ingredients, you can make fresh, homemade ricotta that tastes far superior to store-bought versions — and it’s surprisingly simple.

Why Homemade Ricotta Is Better

  • Fresh and flavorful: No preservatives or additives.
  • Customizable: You control the texture and creaminess.
  • Cost-effective: Much cheaper than buying pre-packaged ricotta.
  • Fun and satisfying: Nothing beats making cheese in your own kitchen.

Ingredients

  • 1 liter (4 cups) whole milk — fresh is best
  • 2 tablespoons lemon juice or white vinegar

Optional: a pinch of salt for seasoning

How to Make Ricotta in 15 Minutes

Step 1: Heat the Milk

Pour milk into a saucepan and slowly heat it over medium heat until it begins to steam (around 85°C / 185°F). Do not let it boil.

Step 2: Add Acid

Remove the pan from heat and stir in the lemon juice or vinegar. You’ll notice the milk curdling almost immediately — white curds separate from the yellowish whey.
